Vegetarian Stir Fry ft. The Easiest Wontons Ever

I told y’all that I was experimenting with non-meat diets and I did not lie!

This recipe is something new and sort of came about as one of those meals where you’re too lazy to go to the store but too frugal to order takeout again, so you make a meal out of whatever you can find in your fridge and cupboards! Fortunately for me, I had the makings of one hell of a stir fry! 

Okay, so I have to confess something, I only actually made part of this meal - the wontons. Arjuna made the entree portion, which arguably is the more important part, but they complimented each other so well that I had to include both! 

Moving on, this vegetarian stir fry and wonton appetizer is such a quick, easy, and delicious meal! We made it vegetarian because of Arjuna’s dietary preferences, but you can honestly modify every single aspect of this meal and it will still come out great. If you want to swap Beyond Meat Grounds for actual ground beef, go right ahead! If you’d rather make fresh steamed white or brown rice instead of a surprisingly tasty combo of leftover Chinese takeout white rice and Indian takeout basmati rice, more power to you! Swap out some veggies, switch the seasonings, use different flavored cream cheese, whatever you want!

Stir Fry Ingredients

Vegetarian Stir Fry
  • 1 Pack Beyond Meat Grounds

  • 1 Green Bell Pepper - Diced

  • 1 Red Bell Pepper - Diced

  • ½ White Onion - Diced

  • 2 Cups White or Brown Rice

  • 2 Tsp. Olive Oil

  • 2 Tsp. Salt

  • 2 Tsp. Pepper

  • 1 Tsp. Crushed Red Pepper Flakes

  • ½ Tbsp. Garlic Powder

  • ½ Tbsp.  of Cayenne 

Stir Fry Cooking Instructions

  1. First things first, you need to cook your rice, or if you’re like me, you use leftover rice from your most recent Chinese or Indian takeout. Set it aside.

  2. Combine your grounds with the salt, pepper, red pepper flakes, garlic powder, and cayenne. Set it aside.

  3. Combine green and red bell peppers with onion and sautee them in olive oil in a large pan on medium-high heat until softer and slightly browned.

  4. Once the veggies are ready, add the grounds and rice to the pan and cook until browned.

  5. Let it sit on low for a couple of minutes then serve! 


Air Fryer Cream Cheese Wonton Ingredients

Wonton Recipe
  • Wonton wrappers

  • Philadelphia Chive & Onion Cream Cheese Spread

  • One egg

  • 1 teaspoon water 

  • Cooking oil

Air Fryer Cream Cheese Wonton Cooking Instructions

  1. Begin by making your egg wash by whisking your egg with your water.

  2. Grab a wonton wrapper and scoop about 2 Tsp. size dollop of cream cheese onto the center of the wrapper. Fold the wrapper diagonally so that there are three corners. Seal the edges with the egg wash.

  3. Continue this process for as many times as wontons you would like

  4. Coat each side of the wonton with cooking oil and place a few into your air fryer. Only place enough wonton wrappers to fill one complete layer of the air fryer.

  5. Cook on 375ºF for 5 minutes, then flip with tongs and cook for an additional 3 minutes. Remove after the three minutes and repeat this process until all of your wontons are cooked.
